I am thinking that it has been WAY too long since I have shared a recipe with you all. And what better way to follow-up a weight loss post than with a post about weight maintenance pancakes.
My new favorite is berry ricotta pancakes – have you tried them?!
Does it get any better than that? Oh yes it does…when you make a chocolate mess version:
These are loaded with ricotta, blueberries and cocoa. Yum.
Recipe:
- 1 cup pancake mix (i used a clean whole grain one)
- 1 cup ricotta cheese (i use all natural)
- 3/4 cup of applesauce (i used a strawberry applesauce)
- 2 eggs
- 1 1/4 cups milk
- *for chocolate version add 2 large tablespoons of cocoa powder
Directions:
combine all ingredients and ladle on to skillet (use medium heat)
Makes about 12 pancakes 🙂

These are one of the most divine creations I’ve seen in a while. Love the combination of ricotta and pancake mix, which I have never had before.
